Blue-brie Toastie

  • 4 slices thick-cut bread

  • 2 tbsp butter

  • 5 oz Brie, sliced

  • 1 cup Berry Fresh blueberries

  • 1 tbsp balsamic vinegar

  • 2 tbsp olive oil

  • Trust us: The pairing of Brie and Berry Fresh blueberries is absolutely sublime. A splash of balsamic vinegar for syrupy sharpness is the only extra ingredient you’ll need.

  • Prep the bread: Spread butter on one side of each slice; these will be the outsides of your sandwich.

  • Layer the filling: With the buttered sides facing down, layer the Brie slices on the unbuttered sides. Top with blueberries, pressing them gently into the cheese so they stay in place.

  • Finish the assembly: Drizzle the balsamic vinegar over the berries, top with the remaining bread (buttered side facing up), and press down firmly.

  • Fry it up: Heat a skillet over medium heat and add the olive oil. Place the sandwiches in the pan, working in batches if necessary.

  • The “Press” technique: Place a sheet of parchment paper over the sandwiches and weigh them down with another heavy skillet or a baking tray. Fry for 3 minutes while pressing down gently.

  • Flip and brown: Carefully flip the sandwiches and fry the other side for another 3 minutes until golden and crispy.

  • Serve: Remove from the pan and let them cool for one minute to let the cheese set. Halve and serve.
