4 slices thick-cut bread
2 tbsp butter
5 oz Brie, sliced
1 cup Berry Fresh blueberries
1 tbsp balsamic vinegar
2 tbsp olive oil
Trust us: The pairing of Brie and Berry Fresh blueberries is absolutely sublime. A splash of balsamic vinegar for syrupy sharpness is the only extra ingredient you’ll need.
Prep the bread: Spread butter on one side of each slice; these will be the outsides of your sandwich.
Layer the filling: With the buttered sides facing down, layer the Brie slices on the unbuttered sides. Top with blueberries, pressing them gently into the cheese so they stay in place.
Finish the assembly: Drizzle the balsamic vinegar over the berries, top with the remaining bread (buttered side facing up), and press down firmly.
Fry it up: Heat a skillet over medium heat and add the olive oil. Place the sandwiches in the pan, working in batches if necessary.
The “Press” technique: Place a sheet of parchment paper over the sandwiches and weigh them down with another heavy skillet or a baking tray. Fry for 3 minutes while pressing down gently.
Flip and brown: Carefully flip the sandwiches and fry the other side for another 3 minutes until golden and crispy.
Serve: Remove from the pan and let them cool for one minute to let the cheese set. Halve and serve.
